I have been a coffee snob for several years, and some people say I have a problem with coffee. I disagree. I have no problem with the amount of coffee I drink, buy, brew, and now roast.

I roast small batch coffees on a first come basis. When I run out of a batch, I am OUT and cannot take any more orders until the next batch is roasted and ready. So follow me on facebook, twitter, and/or instagram and keep your eye out. At this point I only sell 1/2 lb bags at $10 a bag. I take credit card with Square and I can also ship for $5 anywhere in the US.

All of my beans are single-origin (so no blends). I only buy my beans from providers who are participating in the fairest of trade with their farmers from all the regions. Processed with Moldiv

I also only roast light to medium. I do this for the better flavor profiles and for the higher caffeine content (the longer the roast, less caffeine) If I have a dark roast available, it is 1. Rare and 2. A mistake in the roasting process (Rule 1 of home roasting: never take your eye off the bean).

  1. PC – I had the Peru (Chocolate) It was pretty darn good. I think the chocolate part though, set a too defined expectation. I guess I expected earthy to be a part of it with the chocolate, but instead, I found the roast bright, fairly light with notes of lemon grass and a smooth finish. I made mine in a 6-cup french press on the coarsest grind. Overall, I’d give the experience a B+ rating. Need to figure out a cheaper shipping method to make it viable ongoing.

    • Thanks Will! Yeah, I needed to be clearer. I got the chocolate profile on the nose mostly. It does not carry through to the flavor profile very strongly.

      I would love to hear some thoughts from your business major brain about shipping. I was able to cut it from 9 to 5, but yeah, I would love it to be so much cheaper.

  2. I tried the Peru and Mexican coffee and both tasted and smelled great. I would buy either one again. I love that your beans are of single origin and are fair trade also. Oh and great customer service. Thanks PC!

  3. Hey PC nice web sight. I just want to wish you, Tonya and the kids Merry Christmas and thank
    you for the coffee. I’ve enjoyed both of the coffees you sent me,not sure which one I like better.
    They were both very good. How many different roasts do you do and can you send me a list of them with pricing. I have been doing some work for Brain McCaskey and I noticed a Bears
    Christmas List on the counter one day. There were items like new helmets, new goal posts with
    led lights and oh ya new coach and quarterback too! Just sayin something got to change.

  4. PC, thanks for the Ethiopia Sidamo (??). I enjoyed the creamy odor while grinding and got that plus a sweet note in the cup. I always do a cup at a time drip, very slow drip. Best wishes for a great 2015 for you and your family.

  5. An honest friend gives an honest opinion, so here is mine:
    This most recent batch of yours is forcing me to take my coffee snobbery up a notch. I’m usually an Italian Roast kind of guy, so making the coffee a little too weak or a little too strong doesn’t really affect the flavor all that much. With YOUR coffee, I need to up my game with portions and grinding. That being said, this coffee has A LOT going on. I’m finding myself drinking this almost like a whiskey (breathing in while sipping) to capture the flavors. Where with my usual teacher-strength-strong-brew that I can just pound and go, I need to set some time aside to REALLY appreciate what going on with this batch.
